Wire one to a dart trap and every click fires the trap, whichever way the handle happens to be sitting. The two positions are cosmetic unless the thing on the far end of the wire tracks its own state. Treat it as a button you press, just as a pressure plate is a button you stand on.
switch or lever
They do the same job. A lever is larger, easier to spot and a much easier click target, which is what you want on anything you will use daily. A switch is a single tile, sticks to walls, wooden beams and tree trunks, and takes paint well enough to disappear into a build. That invisibility is the whole point in PvP and a constant nuisance everywhere else, so put levers on your own doors and save switches for things you want hidden.

The dungeon has them pre installed on chain lanterns. Bring a pickaxe and you can collect a handful before the Mechanic ever sells you one.
