what it protects
The book works from your inventory. There is nothing to equip and nothing to activate mid swing: while you are carrying it, your own attacks stop shredding plants they pass through. That matters most on an herb farm, where one stray projectile used to wipe out a planter box, and in the jungle, where you spend the whole time fighting through greenery you would rather keep. The Dryad sells it, so owning one is only a question of having her moved in.
the toggle, and why you want it
Pots and Pigronatas fall under the same protection, which is not always what you want. Pots are free coins and potions, so a book that refuses to let you smash them turns into a nuisance the moment you go caving. Press the open key on it in your inventory or hotbar and it flips into an inactive copy of itself, effect off, still sitting in the same slot. Press again to switch it back on. No trip to a chest required. In Journey Mode the researched version always comes back in the active state, whichever one you researched.
what it will not stop
It is not a blanket do not destroy switch. Cobwebs still tear, thorny bushes still pop, and so do rolling cacti, hives, larvae, antlion eggs, explosive barrels and the cracked bricks down in the dungeon. If you were counting on it to keep you from popping a larva and accidentally starting a Queen Bee fight, it will not.
