Knives lob in an arc instead of flying flat, so anything more than a short distance away needs you to aim high and lead the target. Out of the cheap throwables they carry the furthest and hit the hardest, but you pay more per throw and you do not get them back once they land.
The Merchant only stocks them while a Blood Moon is up, which is exactly the night you want a full stack, so buy far more than feels sensible in that one visit. Anything you do not burn through can be upgraded into the poisoned version later, so overbuying is never wasted.

The Merchant throws these himself at anything that gets too close to his house, which is the only time a town NPC fights with a weapon you can also buy from him.
