Stalks need jungle grass with shallow standing water over it, no more than a few tiles deep, and open sky behind them. Any wall at all stops growth dead, glass and fences included, which is the usual reason someone's farm sits empty for an hour. Growth is slow even by plant standards, and stalks push up in long irregular jumps rather than steadily. Build the farm early and harvest whenever you happen to walk past instead of standing there watching it. If you need a quantity right now, Jungle Crates and Bramble Crates are the faster route.
